Welcome back to the Sugar Bowl Project – Chapter 2 What’s the deal with Chess Pie?

If you do a Google search of chess pie and it’s origins you’ll come up with a few answers including a misheard word when a cook was asked what was that wonderful pie and her answer “it’s just pie” to becoming “chess pie”. Or maybe it’s because this sturdy pie is full of sugar so it was stable enough to be housed in the pantry (chest) for a long time, so it became “chess pie”. Or maybe it came from chestnut flour the historic pantry staple of old America from which the pie was made.

Whatever the original source, two things seem to be true, it arose in the American South and one of the oldest, if not the oldest version has vinegar (an easy-to-get acid when citrus fruit was hard to come by).

To be sure chess pie is one that has many variations including molasses pie, vinegar pie, translucent pie and even the ever-popular pecan pie.

So what is chess pie? A sweet, oven-baked custard pie usually with three main ingredients to make the custard: sugar (or other sweetening substitutes), eggs and butter. All other ingredients were a matter of whatever was on hand - spices, milk, buttermilk, nuts… Later as ingredients became easier to come by - chocolate, lemon and other more modern ingredients were introduced.

This autumn and winter we’ll be rolling out some chess pie faves from the kitchen of sister chef Toni Rands in Tasmania. This month is a variation of chocolate chess – Midnight Chess incorporating two types of chocolate and laced with raspberries for a tart balance and finished with malted biscuit base.

Welcome to the Sugar Bowl Project Chapter 1 - The Humble Squash

Most Australians who have visited to Cherry Pie know about Pumpkin Pie, an all-American classic. But when you think of pumpkins as a cooking ingredient most people don't realise that Americans don't just use pumpkins for sweets.

It's true, but the thing is when Americans cook savoury with pumpkin we call them "squash". So while I've always called the veggie in the photo a butternut squash (ok it's technically a fruit), when I came to Australia I had to change to butternut pumpkin. But it's the same thing.

The humble squash is a native to the Americas and has been used in indigenous foodways for thousands of years (since it was first cultivated) and is part of an ancient agricultural practice called "the three sisters" (find out more at https://indianpueblo.org/the-three-sisters/).

My favourite savoury squash recipe that celebrates native foods of the Americas is acorn squash stuffed with wild rice and cranberries. It's a autumn holiday favorite.

My new favourite sweet squash recipe came to me from my sister-chef Toni of Honey Child's Creole (https://honeychildscreole.com/) and is this month's PIE OF THE MONTH: Butternut Pie with Streusel topping on a Gingersnap Base. This pie is chock full of complex and complimentary flavours including the classic pumpkin pie spices (nutmeg, cinnamon and ginger).

Pick up this delectable pie at our next market or order online from next week.

On this the last week of March (Women's Awareness month), Cherry Pie is celebrating an African-American cook from my home state. Malinda Russell was Tennessee born, but moved to Paw Paw, Michigan where she self-published this cookbook in 1866. According to the New York Times, "Russell’s extraordinary cookbook consists of mostly dessert recipes, as she ran a pastry shop in Tennessee–these include puff pastry and rose cake."

This sounds like my kind of cookbook. First step, download the PDF of the cookbook from malindarussell.com then go to the recipe section of the website and try out some kitchen tested recipes.

Easter is coming soon (end of March) and for our family - going back generations - Easter always meant visiting Grandma. For me, visiting Grandma (in Nebraska) meant her warm from the oven cinnamon rolls.

In Australia, hot-cross buns are associated with Easter not the warm, soft, icing covered and slightly sticky rolled buns filled with cinnamon sugar. There's nothing that says Easter more.

This tradition of going to Grandma's for Easter includes my Grandma and Grandpa piling their 7 kids into the the truck to make the drive from Lincoln to Nebraska City to see my mother's Grandma Mary Jane. In this photo is my very young mom and siblings and cousins, my young Grandma and her brother and sister and her mother along with some of the family who gathered around for the holidays in the mid 1950s.

Hope you get ready for Easter this year by trying something different for dessert. Order our pies or cinnamon roll trays for Easter by 18 March and pickup in Docklands Good Friday and Easter Saturday.
